Spam and Fried Rice Recipe
7oz can of SPAM
4 cups of cooked rice (preferably a day old)
Butter/oil for cooking
1/4 cup onion, finely chopped
1/4 cup celery, finely chopped
1 Clove of garlic, finely chopped
1 Small Green pepper, finely chopped
In a wide frying pan, add oil/butter and heat until a drop of water sizzles. Saute together the onion, celery, garlic and pepper. Do not overcook, it tastes best if there’s a little crisp to them still. While this is cooking, cut the Spam into cubes, whatever size you prefer, but small to medium works best for cooking evenly. Now add the Spam cubes to the vegetable mixture and cook until browned. Add the rice on top and crack in eggs. Stir lightly to ensure all ingredients are evenly spread out. Cook until the eggs in the mixture are done to your preference.
